
#BackToSchool: One Yummy Mummy’s Healthy Pot Noodle
September means back to school, and the evenings have once again become a testing time for parents as they try and whip up some delicious dinners to feed their hungry and growing youngsters.
Maintaining some variety at dinner time is always tricky, especially when juggling, among other things, work, the school run, after school activities and a whole lot more.
Over the course of the next few days and weeks One Yummy Mummy will be delivering some easy, nutritious and delicious meals that you can make at home for your family.
First up we have this handy-to-make healthy pot noodle, which is Slimming World friendly for anyone who is sitting down to dinner with their family after a hectic day.
Thsis recipe feeds four people (or two really hungry teenagers who are already eating you out of house and home).
Healthy pot noodles…
Ingredients:
Olive oil / frylight
140g of medium egg noodles
3 chicken breasts
1 garlic clove
2 tablespoons of frozen corn
2 tablespoons of frozen peas
1 chicken stock cube
1 tablespoon of soy sauce
Method:
(You will need a saucepan, a sieve and a wok)
Cook the noodles according to the packet (usually in boiling water for 4 mins). When they are cooked drain and spray with olive oil or fry light and leave to one side.
Spray your wok with olive oil or fry light and heat on a medium heat.
Chop chicken breasts and add to the pan, cook for 15 minutes, turning and making sure all sides are cooked.
Add the chopped or grated garlic, frozen peas and corn and cook for another 15 minutes.
Crumble in a chicken stock cube and soy sauce.
Finish off by adding the drained noodles, mixing the whole lot together in the wok and serve in pots.
