Food with JP Passion: Irish Bacon & Cabbage Soup

Spring may have arrived in season but it still feels very wintery outside therefore I am still very much in the habit of making delicious homemade soups to keep me cosy and warm.

This soup brings together the classic Irish combination of bacon and cabbage.

This is a really comforting soup that reminds me of a good old fashioned Bacon and Cabbage dinner the ultimate Irish comfort food.

Really simple and quick to make but full of flavour and goodness – all the ingredients we need to feel better during these challenging times.

Ingredients:

  • 100g smoked bacon lardons or diced up streaky bacon
  • 120g potatoes peeled and diced
  • 100g onions finely chopped
  • 1 teaspoon garlic powder
  • Knob of butter about 50g
  • 500ml hot chicken or vegetable stock
  • 300g shredded cabbage
  • Sea salt and ground black pepper to season

Method:

1. Use a heavy base saucepan and place it on a medium heat. Add the butter and when it’s melted add in the bacon, potatoes, garlic powder and onions.

2. Cover with a lid and cook for 10 minutes – you want the ingredients to sweat and soften not brown.

3. Then add the stock and bring to a boil. Add the cabbage, reduce to a simmer and cook for 5 – 8 minutes until all the vegetables are tender.

4. Season with salt and pepper, pour into a large bowl and enjoy.

I love serving this with crispy buttered sourdough bread as it’s perfect for dipping and scooping up the soup. This recipe serves four or two, if very hungry, and like all soup recipes can be batch made an freezes well for up to a month to have on call for those cold, rainy dark days when you need a comforting and warming lift.
