
Food with JP passion – Moreish Meatballs

This is a new recipe I’ve recently discovered and started cooking and one I am really excited to share with you all.
Normally when you think of meatballs, chicken is probably the last meat you would associate with Italian themed meatballs but I can assure these are simply delicious and out of this world.
The smells as they roast are somewhat like a roast chicken with stuffing but with an Italian twist but they are much lighter than a beef or pork meatball and when you add the final ingredients it becomes authentic Italian cooking.
These work perfectly as a main course served with pasta and a salad or as individual yummy treats to serve on platters for parties and social gatherings.
Ingredients:
For the meatballs:
6 chicken fillets ground in a processor
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 onion
3 teaspoons tomato Passata
50g grated parmesan cheese
1 beaten egg
200g breadcrumbs
(blitz 4 brioche buns for breadcrumbs)
1 tablespoon fresh basil finely chopped
1 tablespoon fresh parsley finely chopped
Sea salt & cracked black pepper to season
For baking the meatballs:
400g Tomato Passata
75g Mozzarella Cheese
Grating of parmesan cheese
Scattering of fresh parsley
Method:
1. Preheat your oven to 180 degrees
2. Add all of the meatball ingredients listed above into a large mixing bowl and mix to combine evenly but be careful not to overmix or your meatballs will become too stodgy!
3. Take a tablespoon of the meatball mixture and using your hands roll into individual meatballs – You will get somewhere between 24 – 28 meatballs
4. Place onto baking trays and pop into the oven for 12 minutes approx. until nicely golden brown
5. Pour over the tomato passata ensuring each meatball is evenly covered and scatter over the mozzarella cheese and pop back into the oven for 10 minutes until the cheese is melted and golden brown
6. Scatter with freshly chopped parsley and serve either with pasta or a salad and crusty bread and enjoy!
I guarantee you and your family will love this recipe as much as I do. It’s low effort but full of delicious flavour.
The meatballs are light and herby, a slightly different take on the standard meatball you might be familiar with but I always think change is good when it comes to food and serving up different varieties of your favourite dishes.
