Food with JP Passion – Sumptuous scones

My go to recipe for scones is normally my short scone recipe which I adore but this scone recipe is a delicious alternative by Clodagh McKenna from Clodagh’s Irish kitchen cookbook called Orange Blossom Buttermilk scones.

I really love the flavour of orange blossom and added to a light and fluffy scone recipe is a real treat to enjoy.

These scones have an orange blossom glaze which is out of this world.

The buttermilk makes the scones incredibly light and fluffy and served with whipped double cream or mascarpone and a cup of tea, and you are transported to a truly happy place!

Ingredients: (Makes approx. 12 scones)

  • 450g plain flour
  • 1 teaspoon baking powder
  • 60g castor sugar
  • 100g cold unsalted butter cubed
  • Pinch of sea salt
  • 1 large free range egg
  • 1 tablespoon of orange blossom essence      Zest of 1 orange
  • 250ml buttermilk

Glaze

  • 30g unsalted butter
  • 250g castor sugar
  • Zest and juice of two oranges

Method:

Preheat your oven to 220 degrees and dust a baking tray with flour

Sieve together the flour and baking powder in a large mixing bowl and stir in the salt

Using your finger tips or free standing mixer – if you have one – rub the chilled butter into the flour and then stir in the sugar

Whisk together the orange blossom water, orange zest, egg and buttermilk in a large jug

Make a well in the centre of the flour mixture and gradually add the liquid mixture trying not to over mix as it will make your dough tough!

On a flour work surface gently knead the dough to rid of any cracks, roll it out to 2.5cm in thickness and using a 5cm scone cutter, cut out 12 rounds and place onto the floured baking tray and pop into the preheated oven for 10-15 minutes until golden brown and risen.

While the scones are chlling make the glaze. Place all the ingredients into a saucepan and on a medium heat mix together until it slightly thickens and sugar is fully dissolved.

Whiz the glaze mixture in a food processor until nice and smooth and then using a pastry brush glaze generously the top of each scone and serve with cream and a delicious cup of tea and enjoy.

I don’t know many people who don’t enjoy a delicious scone served with lashings of cream with a cup of tea. It’s the perfect way to relax mid afternoon while catching up with family or friends.

These scones are best served on the day they’re baked but they can last for up to three days in an airtight container not they are likely to!

The orange flavouring coupled with the out of this world orange glaze make these the ultimate indulgent sweet treat! I hope you enjoy this recipe!
