Mexican food chain Boojum set to open new restaurant at Liffey Valley

MEXICAN food chain Boojum is opening a new restaurant at Liffey Valley Shopping Centre in October 2023.

The store will be located at the main entrance of the shopping centre, directly beside food outlets Mad Egg and Five Guys.

The Liffey Valley premises will have seating for 50 people inside and 16 diners outside.

Managing director David Maxwell said: “We are delighted to be opening another Boojum store to join our existing seven across our greater Dublin portfolio and the further seven across Ireland.”

The Boojum chain was acquired by UK restaurant operator Azzurri Group in June 2023.

Boojum first opened in Belfast in 2007. In 2015, Renatus and the Maxwell brothers partnered to acquire Boojum, and the tortilla and

burrito chain currently employs 300 staff.

Following the success of its Blanchardstown store which opened in 2021, Maxwell said the company’s second out-of-town location “allows us to extend our delivery service area to D22 and beyond.”

“We put a lot of thought into this site. Liffey Valley is one of Ireland’s most expansive shopping and leisure destinations and attracts around 10 million visitors each year.

“Some people may be put off by crowded Luas or bus trips to Dublin city centre to get their Boojum fix, so this outlet will provide them with another option to grab their order in an impressive new setting,” said Maxwell.
