One Yummy Mummy’s (better than a takeaway) Sweet and Sour Pork

It’s Friday, the end of what is most likely a very long week, and, if like me, you have a hungry family to feed, this sweet and sour pork is a fool-proof way of keeping their taste buds happy without having to phone the local takeaway.

Most of the ingredients will be familiar to you guys, and the bits you don’t have can be picked up cheaply in your local German discount store, which helps with the family budget.

Sweet and Sour Prok via One Yummy Mummy

This recipe is one I return to on an almost weekly basis, and with clean plates every time, I hope your family enjoy it as much as mine.

Ingredients 

A few sprays of olive oil/ fry light

1 standard pork fillet (I get mine in the chill section in Lidl for around 5) 

2 cloves of garlic (crushed)

1 cube of ginger (peeled and chopped)

1 red pepper

1 yellow pepper

1/2 bunch of spring onions

1 small pack of sliced mushrooms

4 tablespoons of tinned pineapple (with a tablespoon of juice)

2 tablespoons of tomato puree

2 tablespoons of soy sauce (you can use low salt)

2 tablespoons of white wine vinegar

2 tablespoons of runny honey

4 tablespoons of water

1 teaspoon of cornflour mixed with a dribble of cold water

Method

You will need a wok to make this in for best results.

Chop your pork fillet into cubes, carefully removing any fat.

Chop all your veggies and ginger, and crush the garlic.

Heat your wok on a medium heat with oil or fry-light and braise the diced pork. Once it’s lightly fried leave to one side on a plate.

Add garlic and ginger to the wok and cook for a minute

Now whack in your veggies, cooking them for three to four minutes.

Next, throw in the pineapple and a little of the juice and add tomato puree, soy sauce, vinegar, honey and a little seasoning (salt and pepper) if desired.

Put your pork back in and give it a good mix, adding four tablespoons of water.

Finally, add the cornflour paste (in a teacup mix one teaspoon of cornflour with a tiny dribble of cold water to a paste), this will thicken the whole dish, and feel free to add more water if it’s needed.

Leave to a simmer for around 30 minutes.

Serve with rice or noodles, and enjoy what is a real family favourite of ours. We always have clean plates with this one.
