Food with JP passion – Whip up a batch of cookies

This is a perfect recipe for whipping up a batch of cookies for during the week, to enjoy post supper with your evening cup of tea or indeed for an afternoon tea spread for family and friends.

Only a few ingredients are required to whip up a batch in mere moments resulting in a delicious sweet treat.

Crumbly and buttery the hazelnuts add a lovely texture while the choc chips add a delicious sweet hit with each bite.

Every time I bake these, which is frequently, they always go down a treat and it’s a recipe I come back to time and time again. I know that if you try them you too will keep coming back for more!

Ingredients 

300g plain flour

250g unsalted butter room temperature

125g castor sugar

1 teaspoon baking powder

1 teaspoon vanilla extract

100g chopped hazelnuts

100g dark choc chips

Method:

1. Preheat your oven to 180 degrees

2. Cream the butter and sugar together until light and fluffy then add the vanilla extract

3. Sieve in the flour and baking powder and mix to form a dough

4. Add the chopped hazelnuts and choc chips and mix to ensure evenly distributed

5. I use an ice-cream scooper to scoop out each cookie to ensure they are roughly all the same size. Roll into a small ball in your hands and flatten between your hands and place onto a baking tray leaving some space between each cookie as they will spread as they bake. You will need two baking trays which do not need to be greased and lined

6. Pop into the preheated oven for 15 -20mins (ovens can vary) until nice and golden brown then transfer to a wire rack to completely cool. Enjoy with a nice cup of tea, shear heaven!

I started baking almost 12 years ago when I moved into my own place.

Throughout the years I’ve realised that a lot of baking is really quick and simple and tastes so much better than shop-bought.

Like everything it takes practice and you will learn from your mistakes. Believe me I have made plenty of them.

The keys to successful baking are: 1. Prepare all your ingredients before your start. 2. Read the recipe at least twice. 3. Invest in some staple good quality baking equipment. 4. Practice, practice, practice.
