Food with JP Passion – Delicious roast chicken

I don’t know many people who don’t enjoy a good roast chicken? It’s such a versatile joint of meat to roast for the Sunday dinner, for delicious salads and sandwiches or as a topping on a homemade Pizza.

Whatever way you to chose to serve it I am going to impart with you my recipe for the perfect roast chicken served with delicious roasted veg!

I make a roast chicken at least once a month and it’s very important, to source a good quality organic or free range chicken from your local butcher, believe me they taste so much better, so it’s worth paying that little bit extra for.

Ingredients: (Serves 4 -6)

1 large Free range Chicken

1 Tablespoon of olive oil

Zest of one lemon

Sea Salt & cracked black pepper

2 sprigs of fresh thyme

Roasted veg:

500g carrots

500g parsnips

2 chopped shallots

50g melted butter

Teaspoon light brown sugar

Tablespoon fresh thyme finely

chopped

Teaspoon cider vinegar

Two tablespoons wholegrain

mustard

Sea salt & cracked black

pepper

Method:

  1. Preheat your oven to 180 degrees. Take you chicken out of the fridge and leave to stand at room temperature for at least 30 minutes before popping into the oven
  2. Prepare the veg and cut into bite size chunks and pop into a large freezer bag. Pop in all the ingredients I’ve listed above (Roasted veg) and zip the bag shut and shake everything around to ensure all the veg is evenly coated with the delicious marinade – I normally do this the night before
  3. Place on the bottom of a roasting tin/tray and place the chicken on top
  4. Pour the olive oil over the chicken and massage with your hands to ensure the chicken is evenly covered – this will give it a beautiful even golden colour onece roasted
  5. Zest one lemon over the chicken and season with the salt, pepper and thyme. Sometimes if not stuffing the chicken I’ll cut the lemon in half and pop it in the cavity of the chicken, it infuses it with delicious flavour
  6. Place in the oven and roast for approx. 1 hour 40 minutes until beautiful and golden brown
  7. Before carving leave to rest covered in foil for 15- 20 mins. This will allow all the juices to seep back into the meat giving you the most succulent delicious roast chicken with delicious roasted veg to enjoy as part of your Sunday roast!
