#BackToSchool: One Yummy Mummy’s chicken curry in a hurry

 September means back to school, and the evenings have once again become a testing time for parents as they try and whip up some delicious dinners to feed their hungry and growing youngsters.

Maintaining some variety at dinner time is always tricky, especially when juggling, among other things, work, the school run, after school activities and a whole lot more.

Chicken Curry in a hurry

Over the course of the next few days and weeks One Yummy Mummy will be delivering some easy, nutritious and delicious meals that you can make at home for your family.

Up next is this delicious chicken curry, which only takes a short time to make and is guaranteed to TASTY!!!

Ingredients:

Olive oil/frylight (in a spray bottle)

4 chicken breasts

1 onion (grated)

2 celery sticks

1 crushed garlic clove

1 heaped tablespoon of plain flour

1 tablespoon of ginger

1 tablespoon of mild curry powder

1 tablespoon of turmeric

1 hot pint of chicken stock

Method

Grate your onion, crush the garlic and chop the two sticks of celery as small as you can.

Chop your chicken breasts and leave to one side.

Spray a saucepan with some olive oil/frylight and add the onion, garlic and celery and cook for a couple of mins until it has softened.

Add your chopped chicken and cook for around 10 mins.

Put in the heaped tablespoon of flour and stir.

Now slowly add your hot pint of chicken stock adding it bit by bit. Keep stirring until the mixture looks thick with no lumps.

Add the mild curry powder, turmeric and ginger. Turn the heat right down and cover and simmer for 30 mins.

Serve with rice and peas (to up the veggie intake).
