Jobs created at first of its kind art craft distillery in Inchicore

A UNIQUE new state-of-the-art craft Distillery located in Inchicore has recently opened its doors to the public.

The Stillgarden Distillery and visitor experience, located in the heart of Inchicore, opened its doors last month after Covid-19 restrictions prevented them from opening in March.

The brainchild of Viki Baird and Pat O’Brien, the distillery is the first of its kind, with an onsite community garden from an area of wasteland now transformed with botanicals, helping to increase biodiversity locally and involve the community by encouraging the re-emergence of native wildlife and insects.

The community garden was awarded best community garden from Dublin City Council in 2020.

This visitor experience at the distillery provides people the opportunity to make their own bottle of spirit – either gin, vodka or other spirits with a choice of over 60 botanicals.

Visitors can experience a historical adventure, botanical exploration, special tastings, demonstrations, discovery moments and lunch from local caterers lead by the distillery experts.

The new distillery has created eight permanent jobs and a further eight will be created by the end of the year.

Viki said it has been a “dream” to bring something different to the drinks industry in Ireland.

“We’ve long observed that, while the craft scene was booming, there was little real invention, not a whole lot of fun. We want to change this with Stillgarden,” she explained.

The team of eight includes one of Ireland’s youngest and most exciting head distillers – Eanna Burke, who created the recipe for the Stillgarden Distillers Edition Gin which launched in April 2020 as well as brand ambassador Jordan Duncan.
