One Yummy Mummy’s (Mammy’s Favourite) Savoury Mince

One Yummy Mummy’s (Mammy’s Favourite) Savoury Mince

On a blustery day like today, I crave nothing more than a good “mammy” dinner!!!

Taking one mouthful instantly takes you back to a time when you were panicking about your homework before the Glenroe credits rolled and it was time for another week to start.

It’s amazing how food can transport you back in time, just like having your very own flux capacitor.

This classic savoury mince with creamed potato is nostalgia in a bowl.

A warm fuzzy feeling on a wet day, like a hug from a granny who is no longer with us X.

We really knew how to make a good dinner back then. This is still a huge favourite of ours, and I hope you enjoy my take on it.

Get messy and have fun.

One yummy Mummy x

500g of Extra lean beef

1 onion Grated

2 carrots  chopped

2 stalks of celery

1small tin of corn or peas (we like corn in the yummy house)

2 beef stock cubes (mixed with a warm pint of water)

A splash of Worchester sauce

1 tablespoon of parsley (fresh is best but if you have dried it’s ok)

1 tablespoon of thyme (if you have fresh use it, and if not dried will do)

1 bay leaf

1 teaspoon of corn flour mixed with a tiny drop of water to thicken

A little pinch of black pepper and a little salt

Put a pan on the hob on a medium heat with a teaspoon of olive oil/frylight.

Soften onion, garlic, celery and carrot for 5 minutes.

Now add the mince to the pan, browning it and breaking it up with a fork.

Drain off the little fat with a sieve, then return to the heat.

Add the corn (or peas or both) with the pint of beef stock and stir well.

Sprinkle in parsley, thyme, and mix again.

Finish with a bay leaf and a splash of Worchester sauce.

Mix cornflour with a dribble of cold water in a cup and add to the pan, this will thicken the whole recipe.

Simmer on a low heat for 35 minutes (season with pepper and a little salt).

Pour over a dollop of creamy mash and tuck in to what is a real family favourite, and let me know what you think over on
