Peachtree East secure four medals at Culinary competition
THE team at Peachtree East took four medals back to Tallaght from a national culinary competition staged recently in the RDS, reports Mary Dennehy.
Peachtree owner and chef Paul Phillips entered the Chef Ireland Culinary Competitions at the recent Catex catering exhibition in the RDS, along with his head chef Derek Hall, commi chef Amanda Sharkey and chef de partie, Gemma Collier – with all four winning medals.
Derek and Amanda both won golds respectively in the Lamb and Hot Dessert categories, while Paul was awarded silver for his fish dish and Gemma, bronze for her duck.
Paul told The Echo: “To enter four of our staff and to win four medals is amazing, and we’re all delighted.
“The win reflects the level of skill and determination of the team here at Peachtree East, we don’t have to push ourselves and enter these competitions but we do.
“All of the prep that goes into these competitive events is done outside of work hours, which shows the dedication staff have to their craft.”
He added: “I’ve been entering these competitions for years and it’s great to see my team taking them on now too.
“I think it’s important to never rest on your laurels, to keep pushing yourself and learning new things.
“Entering competitions like this also allows you to see what other people are doing across the country…. which keeps you on your toes and inspired.”
Paul told The Echo that a number of the winning dishes from the competition will be introduced to the menu at Peachtree East.
