I love these dark, fat patties of delicious chocolate shortbread exuberantly packed with dark chocolate and white chocolate chips! I’ve been whipping up batches of these cookies for over a decade now.

I love to bake a batch early in the week; that way I know I have something for my evening after dinner treat with a cup of tea.

Don’t worry these are meant to look like they are covered with lots of cracked crevices but the great thing is they are a doddle to make, and meltingly gorgeous to eat.

Perfect recipe to keep the kids entertained while we all stay at home and observe the current social distancing guidelines and why not as we do this; indulge in a delicious sweet treat.

Triple Chocolate Chip Cookies

Ingredients: Makes about 18 cookies

  • 250g soft unsalted butter
  • 150g caster sugar
  • 40g cocoa powder
  • 300g plain flour
  • ½ teaspoon of bicarb
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 100g dark chocolate chips
  • 100g white chocolate chips

Method:

1. Preheat your oven to 170 degrees / Gas mark 3 and line two baking sheets with parchment paper.

2. Using an electric mixer or wooden spoon, cream together the butter and sugar until fluffy and pale; then beat in the cocoa powder and when that’s mixed add in the flour, bicarb and baking powder.

3. Finally add the vanilla extract and chocolate chips and mix the dough together until evenly combined.

4. The mixture is soft and sticky and I find it easiest to form the cookies using an ice-cream scoop which will also ensure they are all even / same size

5. Bake for about 15 minutes and even though they won’t feel like they’re baked the will continue to cook and harden as they cool.

These cookies will last for up to a week once stored in an airtight container but I guarantee that both you and the kids will love them so much they won’t last that long! These are one of my favourite cookie recipes and I adore these with a cup of tea. For kids some hot chocolate would be perfect! There has never been a better time to get into the kitchen and start baking and cooking now that we all have more time on our hands and getting your kids involved is a perfect activity all the family can do together and enjoy during these challenging times!
