New chapter and adventure for chefs at staycation resort

TWO chefs from Tallaght have partnered with the newly renovated Poulaphouca House & Falls, which is reopening as a luxury wedding venue and staycation resort on the banks of the Blessington Lakes.

Trevor Kearns and Hugh Hyland, former Home Economic Leaving Cert 1998 students at Old Bawn Community School, along with their business partner and chef Liam Tilly, established 3 Cooks.ie a few years back, after recognising the need for a five star bespoke catering company.

3 Cooks do the catering for a range of private and corporate events, and for the Hunt stand at Punchestown Races and at Coolbawn Quay, Tipperary.

The three have over 70 years experience working in high end hospitality industry as chefs, but their partnership with Poulaphouca House & Falls, provides a new chapter and fresh adventure at the salubrious surroundings in Hollywood, Co. Wicklow.

“I used to go there as a kid 25 years ago, it was a great place to go to but it had become vacant, I passed by coming home from a trip a number of years ago and was shocked at how run down it had become,” said Trevor, a former head pastry chef in the Westbury, who also worked at luxury resorts in USA and Portugal, before coming home to take up a position as head chef in the opening of Carton House Hotel in Kildare.

“Daniel and Claire Laws took it over. They approached us, a huge amount of work, renovation and investment has gone into it. It is a really good venue overlooking the Blessington Lakes, you can go for Sunday lunch with the family, or enjoy a staycation with your partner.”

Poulaphouca House is preparing for a return to outdoor dining on June 7 and are taking bookings for Summer staycations.

Trevor continued: “We have covers at the back with heaters. It is like the Porterhouse in Bray. The average Saturday dinner is 6pm to 8/8.30pm and Sunday is 2pm to 5.30/6pm. Private rooms can host 20/30 people.”

Poulaphouca House offers a dream venue for weddings, and private accommodation breaks with 11 ensuite rooms located between the main house and the lodge on 36 acres of countryside.

During Covid, 3 Cooks.ie kept their business alive doing various different take out meals and 250 free meals per week to vulnerable people in the Blessington community.
