One Yummy Mummy’s pancakes four ways including syn free and very sinful

We are huge fans of pancakes in Yummy HQ, and it doesn’t need to be pancake Tuesday to enjoy them.

I make my porridge pancakes most weeks, but I thought for the week that’s in it would be nice to make pancakes four ways – from the syn free to the sinful (if you can’t have sinful pancakes on pancake Tuesday then when can you have them eh..?)

The Slimming World syn free ones are for myself (I’m trying to be good,) and you know they don’t taste half bad.  

The porridge ones are great if you are trying to sneak the good stuff into the smallies (they are one of my most popular recipes since posting it last year).

I’ve also added my regular pancake recipe, which is one I have been using for years.

As for the grand finale? They’re scrumptious chocolate and butter milk pancakes, and yes, they’re really sinful!! They taste amazing topped with maple syrup and marshmallows.

So it’s up to you, you can be saintly or go the whole hog this pancake Tuesday and be a sinner (for one day at least).

Syn free pancakes (for any adults doing slimming world)

Ingredients (makes 4 pancakes)

  • 35g oats

  • 2 eggs

  • 1 fat-free banana custard yoghurt

  • 2 tablespoons of sweetener (the granulated one)

  • 1/2 teaspoon vanilla essence

Method

  • Mix the yoghurt and oats together, leave for five minutes to let the oats soften

  • Mix in the egg (an electric hand mixer works really well)

  • Finally, add in the sweetener and vanilla essence

  • Spray a non-stick pan with frylight, (this works best on a really hot pan)

  • Add a spoon of mixture and wait for little holes to appear, then flip with a spatula and wait until it’s cooked.

Porridge pancakes

Ingredients

  • 3oz of plain flour

  • 12oz of porridge oats

  • 1 banana

  • 1 teaspoon of baking powder

  • 1/4 teaspoon ground cinnamon

  • 230 mls of milk

  • 2 tablespoons of margarine

  • 1 large egg

  • Olive oil in a spray bottle

Method

  • Get 2 mixing bowls

  • Sieve the flour and mix all the dry ingredients into one bowl

  • Melt the margarine

  • Whisk the egg and milk in the other bowl

  • Add the egg and milk to the dry ingredients, mixing well

  • Finally, add the melted Margarine and give a good mix

  • Add the banana and blend (if you wish)

  • Spray a large frying pan with a little olive oil and put on a medium heat

  • When the pan is hot, add the pancake batter

  •  Holes will start to appear in the batter, then flip it over and cook until done

Regular pancakes

Ingredients

  • 150g plain flour

  • 1 tsp baking powder

  • 1 egg

  • 150 mls milk

  • 30g caster sugar

Method

  • Sieve the flour and mix the dry ingredients together in a mixing bowl

  • Mix the milk and egg in another bowl

  • Pour in your wet mixture and mix with a hand whisk (give a good mix)

  • Heat a tablespoon of oil on a medium heat (use a non-stick pan)

  • Ladle on your batter and fry until holes appear and then flip and cook on the other side

Chocolate pancakes

Ingredients

  • 340g plain flour

  • 2 tablespoons of cocoa powder

  • 2 tablespoons of caster sugar

  • 1 tablespoon light brown sugar

  • 1 teaspoon baking powder

  • 1 egg

  • 240mls buttermilk

  • 1 tablespoon of melted butter

  • 1 tsp vanilla essence

Method

  • Sieve flour and add in all the dry ingredients to the flour

  • In another bowl mix buttermilk, egg, melted butter and the vanilla essence

  • Pour the wet ingredients over the dry and give a good mix together

  • Heat a tablespoon of oil on medium heat on your non-stick pan

  • Ladle on the batter, fry until holes appear in the batter and flip to cook on the other side

  • Serve with marshmallows, maple syrup and chocolate spread
